This is the kind of meal I come back to on busy weeknights: it comes together in about 30 minutes, keeps well for lunch the next day (store the dressing separately), and hits the nutrition targets I care about without any calorie-counting or measuring.

The base — quinoa cooked in vegetable broth — carries flavor better than water and adds a small amount of savory depth. Everything else is built around contrast: warm seared salmon against cool avocado and cucumber, the crunch of raw cabbage, and a bright lemon-garlic dressing to tie it together.

    Rinse quinoa under cold water, then simmer in vegetable broth for about 15 minutes until the liquid is absorbed. Fluff with a fork and set aside.

    Pat the salmon fillets dry and season both sides with smoked paprika, salt and pepper.

    Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear salmon skin-side up for 4 minutes, then flip and cook another 3–4 minutes until the internal temperature reaches 125–130°F.

    In a small bowl, whisk the remaining 1 tbsp olive oil with the lemon juice, lemon zest and minced garlic to make a dressing.

    Build the bowls: quinoa as the base, then flaked salmon, sliced avocado, shredded red cabbage and diced cucumber arranged in sections.

    Drizzle with the lemon-garlic dressing and top with fresh dill.

Can I use frozen salmon?

Yes. Thaw it overnight in the fridge and pat it very dry before seasoning — excess moisture is what stops salmon from getting a good sear. If you're short on time, thaw sealed in cold water for about 30 minutes.

How long do leftovers keep?

The bowl components keep for about 3 days refrigerated. Store the dressing separately and add it just before eating so the vegetables don't wilt. Salmon is best reheated gently or eaten cold over the quinoa.

Can I swap the quinoa for something else?

Brown rice or farro work well as one-for-one swaps (adjust cook times). For a lower-carb version, use cauliflower rice — you'll want to add another source of fiber, like extra vegetables or a spoonful of hummus.

Is this good for GLP-1 medications?
